Since we moved house a few months ago, our (old) Bosch WFF1201 seems to wash too hot when the boiler is full of hot water. I assume it's best to just use the cold hose for the inlet and disconnect the hot one, but would be really grateful to know if that will be OK for the machine (manual seems no help)

Hello. If it's a cold fill washing machine with just one water valve it's essential to only connect it to the cold water supply - Don’t connect the hot water supply to the cold valve on cold fill washing machine.

If it's a hot and cold fill washing machine with two water valves it needs to be connected to both supplies - unless contrary advice is given in the instruction book - as some modern Indesit or Hotpoint washing machines still have 2 valves but you are instructed to connect them both to the cold supply using a y-piece adapter.

If it's an old hot & cold fill washing machine than needs a hot and cold supply then connecting them the wrong way round can be done if the plumbing is wrong. This would result in excessive creasing, excessive hot water use, and the clothes will come out warm or even shrunk (Washing badly creased after washing)
